This scrumptious pudding is quick to make and can be a healthy sweet treat that you don't have to feel bad about. If you’re a chocoholic you can add some unsweetened cocoa powder and you’ll have a tasty chocolate banana pudding.

The combination of frozen and regular bananas makes the pudding creamier, though you can make this with all regular bananas. You can make the pudding creamier by adding more cashews or bananas.

To adjust the sweetness, adjust the amount of dates you use.

Alternatively, you can sweeten this with stevia. The stevia I'm referring to is the concentrated stevia extract powder with absolutely no other fillers or ingredients, preferably organic. This is a processed product, and some people get a negative reaction to it, or don't like it. But it's worth trying it if you're looking to reduce your sugar intake. Avoid using the stevia blends that are popular, as they contain a lot of fillers, additives, flavorings and sugar, that can cause digestive upset.

You can also use organic dried and ground stevia leaf.

Use all organic ingredients, and ensure any packaged ingredients are labeled gluten free.

Ingredients:
2 cups Raw cashews, or other nuts of your choice
2 Frozen bananas
2 Regular bananas
4 Medjool dates
3/4 cup Fresh almond milk
Toppings (optional):
Raspberries
Chopped cashews, or other nuts
Fresh grated coconut
Substitutions and Notes:
  • Nuts: For a smoother consistency, soak the cashews overnight. Or you can simply grind the cashews to make a fresh nut butter. If you want a traditional peanut butter texture, grind the nuts before blending with the other ingredients. Making nut butters works best in a food processor.
  • Dates: In place of the Medjool dates you can use 8 Deglet Nour dates, 1/4 cup Honey (raw and unfiltered), 2 tablespoons Homemade Date Sugar or stevia extract powder (add it a small amount at a time, to get the sweetness that you like, and be sure to get stevia extract that has no additives or fillers, or you can even use fresh or dried stevia leaves).
  • Almond milk: In place of the fresh almond milk you can use unsweetened yogurt or cream, or other milk of your choice.
  • Dairy free: Choose a non dairy cream or milk if you're not using fresh almond milk.
Directions:
  • Place all the ingredients in a food processor or blender. Blend until smooth. Chill for at least 2 hours.
  • Serve topped with your favorite toppings.

This sounds creamy and delicious like Ice Cream using frozen bananas too!! Can’t wait to tamale this❤️❤️❤️
